Breakfast at the Office: Blueberry Overnight Oats
If you are going to have a busy morning, overnight oats are the perfect breakfast to make the night before. You will have a ready-made breakfast when you wake up, which you can take to the office and eat at your desk. How is that for ultimate productivity!
This recipe is great when you need something to keep you energized until lunch. I’ve used blueberries in this recipe but you can substitute any local seasonal fruits you can get your hands on.
Overnight Oats Recipe
So here is the recipe: If you want to make a larger batch or a smaller one, the ratio is 1 part oats to 2 parts milk.
Ingredients
- 1 cup (90g) oats
- 2 cups (470ml) almond milk
- 1 tbsp cinnamon
- 2 cups (200g) blueberries
- 1 tbsp honey
Serve with
- Fresh fruit, granola, or nut butter
Method
1. Mix all the ingredients together and put in four separate airtight jars/containers.
2. Place in the fridge overnight.
Overnight oats last up to 3 days.
Ideas:
As an alternative, you can blend the mixture before putting it in the fridge. This gives it more of a smooth texture. You can also layer it with fresh fruit and granola.
